As with all Hexclad products, the wok is three-layered. The inside and outside are stainless steel and the middle is aluminum which conducts heat well. The reason the aluminum is not on the inside or outside is that it can react with acidic foods. This wok is heavier than aluminum woks but lighter than carbon steel.

The wok is 12” across and 3” which gives ample room for cooking for a large family. It is double handled which makes it easy to lift and transfer the contents of the wok. The handle remains cool on the stovetop although it can get hot if you put the wok in the oven. 

It comes with a tempered glass lid which is stronger than ordinary glass so is durable. It is easy to see how your food is coming on without having to remove the lid.

This frying pan is suitable for a couple or a small family as it is 8” in diameter. You can cook very evenly on it. Just pour an ounce of water on it to test it. Swirl the water around and when it stops the water remains evenly spread across the bottom of the pan.

Like all Hexplan cookware, it is tri-ply and has an aluminum layer sandwiched between two stainless steel layers. Aluminum can react with acidic foods so having the stainless steel layers stops this from happening. The pan is both nonstick and made of stainless steel, which is quite unusual when it comes to pans, but it works well.

The handle doesn’t get hot, so you won’t be burning your fingers on it. It is also comfortable to hold. If you put the pan in the oven, make sure that you take it out with gloves on as the handle will get hot. The pan can cope with up to 500F of heat in the oven, but don’t put it in at a higher temperature as it will start to decompose. 

Other benefits are that it’s durable and easy to clean. It doesn’t get that dirty because it’s nonstick so you can just wash it with warm soapy water.

Here we have another 12″ wok, but this one comes without a lid and is, therefore, more reasonably priced. However, who needs a lid with a wok? The dishes you will cook in it are so simple and they need stirring as well, so why bother with a lid? You’ll still get great results. If in the future, you decide that you want a lid, you can buy one separately. You might want to cook soups or pasta sauces in your wok, and yes you can do this. Then a lid might come in useful.

Like all Hexclad products, this wok is three-layered. You have an inside and outside layer of stainless steel and in the middle, there is aluminum that conducts heat well, unlike stainless steel. However, aluminum does react with acidic food, but the stainless steel counteracts this. 

Other features include a dual handle, making it so much easier to take off the stovetop. The handle remains cool unless you put it in the oven. You probably won’t be wanting to put your wok in the oven, but if you do, remember that it is oven-safe to 500F and not more, otherwise, it can start to disintegrate. 

The wok can be used on every type of stovetop, even induction as magnets are incorporated into the outside layer. It is also scratch-proof so you can use metal utensils on it and can scrub it with steel wool. However, it is dishwasher safe so why bother to wash it by hand?

What is Hexclad Made From?

Hexclad is made from 6-sided hexagons that have been lasered onto the cookware. This layered etching design has peaks and valleys. The peaks are stainless steel and the valleys are nonstick. The stainless steel etching will help you to sauté and sear.

The pans have three layers. The core is made from stainless steel which is PFOA free. The center layer is aluminum which helps to distribute heat evenly.
