  • Garlic cloves – 4 chopped
  • Onion – 1 chopped
  • Dry oregano – 1 tablespoon
  • Dry thyme – 1 teaspoon
  • White pepper – 1 teaspoon
  • Dry rosemary – 1 teaspoon
  • Lemon juice – 2 tablespoon
  • Fresh sage leaves – 3

Method

  1. Blend Garlic, onion, dry oregano, dry thyme, white pepper and dry rosemary until they become a puree.
  2. Place the turkey breast into a medium bowl and cut a small hole with a knife so that the puree can get inside the meat. Roll the herbs by hand over the turkey breast evenly.
  3. Wrap the bowl loosely in plastic and place the turkey in the fridge for 2 hours to marinate, its worth mentioning that the longer you marinate the chicken, the softer and gravy-like it’ll be when you’re ready to grab it.
  4. Place the foil on a shallow baking dish and preheat the oven to 375 degrees, and when the temperature reaches 375 degrees, turn off the oven and turn on the broiler.
  5. Place the turkey in the middle of the oven and cook for 5 minutes, achieving a pleasant earthy brown colour on top.
  6. Flip the breast over and cook the opposite side for five more minutes, and watch the meat carefully so that you can avoid it burning.
  7. Turn off the broiler and turn the oven back on to 375 degrees, broil the turkey in the oven for exactly 20 minutes, taking care that the turkey does not burn during this phase.
  8. Turn the oven off, and turn the turkey over, allowing it to cook in the heated oven for another 20 minutes.
  9. Check the internal temperature of the turkey breast, once it has reached 165 degrees Fahrenheit, it is ready.
  10. Before cutting the turkey, remove it from the oven and let it cool for 15 minutes, then add fresh sage leaves and lemon juice to the meat.
