  4. Remove the pot from cooking and add the drained pasta and butter to the pot with the garlic and toss until the pasta is coated in garlic and oil.
  5. Add the parsley Parmesan mixture to the pot and toss again. Squeeze about 1 Tbsp of lemon juice over the pasta and season with 1/4 teaspoon of salt. Toss to combine, then taste and adjust the salt, pepper, or parmesan to your preference.

If broccoli makes you a little uneasy, it’s most likely because you haven’t tried it roasted yet. Roasted broccoli adds crunchy deliciousness to a main meal. You can use frozen broccoli for this as well.

  1. Preheat the oven to 200 degrees Celsius. Wash and chop the broccoli into bite-sized florets.
  2. Spread the florets out over a large baking sheet, drizzle with olive oil and sprinkle with salt and pepper. Toss the broccoli until it is fully and evenly coated in oil.

Creamy mashed potatoes are my absolute favourite, not only do they require less preparation time, but the unmissable creamy salty flavours of the mashed potatoes paired with the zest of the lemon pepper chicken are a perfect combination to a meal.

  1. Bring a large saucepan of water to the boil. Add potatoes and boil for about 15 minutes or until tender. Transfer to a colander and drain well, then return to the pan and set over a very low heat for 2 minutes to dry completely.
  2. Heat milk and butter in a separate pan, then pour over the potatoes. Remove from the heat, then mash potatoes using an electric whisk or a potato masher. Tip in some cream and beat with a wooden spoon until smooth and creamy. Season with pepper and a pinch of salt.
