  3. In an ovenproof pan sear the lamb for roughly two minutes on each side on high medium heat.
  4. Transfer the pan to the oven and roast them until at their desired level of cookedness. This should take about ten to twenty minutes on average.

A classic side dish for near enough any occasion and any main course is naturally roasted vegetables. This is of course also true when it is used as a lamb side as the variety of subtle veggie flavours will pair perfectly with those of the lamb.

The beauty of this dish though is that it is not only a healthy side option but also one that is incredibly versatile and can be customised to your desires. As such whether root vegetables or green veggies are more your thing, this will make for an excellent choice.

If though, you really want to make things interesting then the choice of seasonings will play a big role. Naturally, olive oil, salt, black pepper and herbs like fresh mint, garlic powder and barley make for excellent choices.
