What Is Chicken Noodle Soup?
Chicken noodle soup is amongst the most popular varieties of soup, and is made with egg noodles, chunks of chicken, and often will contain several types of vegetables including carrots, celery and onions. This soup doesn’t always have to contain noodles, some people replace the egg noodles with rice or pasta, equally resulting in a deliciously comforting meal to have during the colder days of the year, when you just want to curl up on the couch with a blanket, and a bowl of something hot clutched in your hands.

How To Make Chicken Noodle Soup?
To make this scrumptious meal that will have your stomach spreading warmth to your organs in no time, you will need:
- 2 tablespoons of butter, chicken fat, or olive oil
- 1 large onion, chopped
- 2 large carrots, chopped
- 2 stalks of celery chopped (if desired)
- 4 cloves of minced garlic
- 2 bay leaves
- 1/2 teaspoon of dried thyme
- 4/5 thighs of skinless, boneless chicken
- 8 cups of chicken stock or broth
- 5 ounces of egg noodles or pasta
- salt and pepper
- 1/4 cup fresh parsley, finely chopped
Start by melting the butter in a large pot over medium heat, then add the onions, celery, and carrots. Cook whilst stirring every few minutes until the vegetables begin to soften.
Stir in the garlic, bay leaves, and thyme, and cook whilst stirring the garlic around the pan for about a minute.
Carefully pour in the chicken stock and let it start to simmer. Taste the soup then adjust the seasoning with salt and pepper, adding more if needed.
Dunk the chicken thighs into the soup, so that the broth covers them, then bring the soup to a light simmer, and start to partially cover the pot with a lid and cook, whilst stirring every now and then until the chicken has cooked through.
If at any point you notice the broth is low, add a splash of water or more chicken stock. Turn the heat to medium-low.
Transfer the cooked chicken to a plate, stir the noodles into the soup and cook until its done, this should take approximately 8 to 10 minutes, depending on the type of noodles used.
While the noodles cook, shred the chicken into strips or dice them into cubes. Slide the chicken back into the pot and then have another taste of the soup. Adjust with salt and pepper, stir in the parsley and serve with your favourite sides.
You can either have a wonderful sandwich to have with your delicious egg noodle soup, or a cheesy toast to dip into the chicken broth, and have a burst of delectable flavours swirling in your mouth.
